Homemade Carrot & Lentil Soup

Week three of the food & drink February challenge went well. So instead of writing about that, my wonderful girlfriend Sarah has written a guest post.

Carrot and Lentil Soup

Here is a fantastic soup recipe that anybody can cook. This recipes makes approximately four to six portions.

Ingredients

250g Red lentils
1 to 1.5kg Carrots
2 to 4 onions
2 pints boiling water
3 heaped table spoons of Knorr vegetable stock granules
1 tablespoon of oil

Method

1. Peel and chop all the carrots
2. Chop the onions into wedges and then seperate
3. Heat oil in a very large saucepan
4. Add onions and sweat until translucent
5. Add carrots and lentils
6. Mix stock powder with boiling water and pour into pan
7. Once at the boil simmer for approximately 45 mins to an hour (or until all veg and lentils are soft. Lentils will turn a lighter colour and have enlarged slightly)
8. Once cooled use a blender to blend to consistancy of your choice

Best served with fresh bread.

Free Icon(s) Pack

I’ve put together an icon pack which is free for personal and commercial use. Use them as part of website templates, applications, whatever. The icons are included in ico and png formats.  There are 43 icons currently in the zip archive. The grey icons are 16×16 pixels and the rest 32×32 pixels.  Don’t try and sell them on their own or hold ownership of them. a) they are not good enough. b) That is just rude. If distributing this icon pack, please include the readme.txt file in the zip archive.

Food & Drink Challenge – Week 2

Another week almost complete for the February Food & Drink Challenge. I thought this week was going to be easier, far from it, it was tougher. Chuck in a serious amount of work, some stress and a cold for fun. I like the taste of coffee & tea, so in sleepy moments you think, perhaps a mug. No! I stuck the challenge, but it was tough. Especially the day when I worked sixteen hours one day and the previous day at least thirteen. However those long days and the level of productive output probably wouldn’t of been possible, if not for the challenge in the first place.

The knock on effect though has also been good, it helps motivate in other areas. At the same time we’ve still not been having items like chocolate and other food such as chips, pizza etc. Plus I’ve seriously reduced the amount of bread I eat during the challenge. Not a little bit, but a huge reduction and the challenge has made that easier.

With valentine’s day on Sunday.  Even though it’s not about the food or drink at all, we’ve forward planned food & drink with the challenge in mind. My girlfriend joining in the challenge from the beginning has made a huge difference, otherwise it would of been harder. Not only for one half of a couple to take part, but also for the support she provides. I am a very luck chap.

I’ve heard back from some of the others doing their feb food & drink challenges. From amazing side benefits such as serious weight loss, better sleep to successfully sticking to the challenge or experiencing temporary hurdles. The fact that others have decided to join in, make the effort, think consciously about their food & drink, makes them stick out from the norm and is fantastic.

free nanoCMS website theme (template) – Sunset

The latest build of nanoCMS Community, a nifty flat file content management system contains my Sunset template (theme). However for those using an earlier version of nanoCMS such as 0.4 or nanoCMS Community build 0.5 (winter alpha) you can use it also and download it here.  Plus it doesn’t take much time to modify this theme for other cms’s or even dare I say it…. a static site.

This template is free for personal and business use. However please leave the copyright notice, credit and link for me in the footer.
